Spiced Mayonnaise

(Perfect for Crab cakes, Sandwiches or Fried Fish)
Ingredients
• 2 Egg Yolks
• 2 Tsps Lemon Juice
• 2 Tsps Dijon Mustard
• 1 Tbs River Spice
• 1 Cup Olive Oil
Directions
Add all the ingredients to a food processor and blend. With the motor running, slowly drizzle in the olive oil until thickened.
Roasted Mountain Trout

Ingredients
• 1 Whole Trout (Cleaned)
• 1 Lemon (Sliced)
• 2 Sprigs of Dill
• 2 Sprigs of Thyme
• 2 Tsps River Spice
Directions
Dust the Inside of the trout with River Spice. Stuff with sliced lemons and herbs. Drizzle with olive oil and roasted in a preheated oven (375 Degrees) for 15 minutes.
Grilled North Carolina Shrimp

Ingredients
• 2 Pounds Fresh Shrimp (Cleaned and Deveined)
• 2 Tbs River Spice (or to taste)
• 2 Tbs Olive Oil
Directions
Toss all the ingredients in a bowl. Preheat a charcoal grill. Grill the shrimp until just cooked through. Serve immediately.
